Homemade Low-er Fat Chocolate Sauce
Remember how I made that chocolate cake without any chocolate? That cake was still OK but I wanted chocolate, damn it! I found a recipe for chocolate syrup at Glorious Treats and turned it into a sauce. I love it because it has no dairy or fat (although lots of calories). I thought it would be perfect to smother the cake in.
In a small sauce pan add 1 1/2 cup sugar, 3/4 cup cocoa powder and a dash of salt.
Add I cup of water.
Bring mixture to a boil, stirring occasionally. Reduce heat and cook 1 minute.
I was worried there would be clumps or bits but there weren't!
Add 1 tsp of vanilla. It was at this point I realized this syrup is going to be way too thin and I should have added the vanilla after I thickened it. Doh!
I put the sauce back on the stove, brought it to a simmer and then added a slurry of 1 tbsp cornstarch mixed into 2 tbsp water. I whisked it together until it got nice and thick. (This is when you should add the vanilla, off the heat!)
I let the sauce cool a bit and then began slathering....
... and slathering...
Now that is dark and delicious! I love how the sauce almost looks like a naughty smile along the edge of the plate. Wow, what a difference! It was delicious.
I even used the sauce to make my own hot chocolate and it was divine!
What a perfect light healthier-kind of sauce than using say a ganache for the cake. Although that would have also been amazing.
This recipes makes around 2 cups of chocolate sauce. I put some in the freezer and this morning just used the sauce to make a morning banana mocha smoothie. Fantastic!
I love how easy, fast and simple this sauce is to make. A total keeper recipe for me.
